Hot Cross Bun Recipe

Our pastry chefs have been baking Hot Cross Buns for years, simple to follow but mouthwateringly delicious try baking these at home this Easter.

Hot Cross Buns


For the dough:
300ml full-fat milk
50g butter
500g strong bread flour
1 tsp salt
75g caster sugar
1/2 tsp ground cinnamon
7g dried yeast
1 egg
75g sultanas
50g mixed peel
1 orange (zested)
1/2 apple, peeled and chopped

For the cross:
40g plain flour
40ml water

For the apricot glaze:
40g apricot jam
10ml water


Boil the milk then remove from the heat and add the butter.

In a mixing bowl add the flour, salt, sugar, yeast and cinnamon.  Slowly add the milk mixture followed by the eggs. Leave in food mixer kneading for at least 5 mins and then cover with oiled cling film and leave to prove for at least half-hour or until double in size.

Put the mixture back in the mixer and add the rest of the ingredients mixing well then cover again with oiled cling film and prove again for at least half an hour or until double in size. When its doubled in size again knock the mixture back down and divide into approx 75g balls and place on a baking tray. Cover with a damp cloth and leave to prove for the final time.

For the cross mixture make a paste and pipe onto the buns.

Bake on 175c for 13 – 15 mins.

Once cooked heat up the jam and water and then brush the buns with glaze.
