Cornish louche cocktail recipe

This exciting cocktail takes two of the best local products: Cornish Pastis from Tarquin’s and Red Stuff rhubarb jam (you can make your own using this recipe) to make a zingy drink – perfect for a spring day in the garden. We also use our own homemade grenadine – but use whatever you can get your hands on.

Ingredients per cocktail:

1 tablespoon Red Stuff rhubarb jam
50ml Tarquin’s Cornish Pastis
25ml grenadine
Optional lemon juice
Ice to serve

Method:

Combine the jam, gin and grenadine in a cocktail shaker. Shake vigorously, then strain and pour over ice. If you’ve used a very sweet jam, add a squeeze of lemon to taste. Garnish with mint and serve.

You can experiment with different types of jam – but we’d recommend using something unusual, seasonal and packed full of flavour, how about gooseberry and elderflower or strawberry and black pepper?
